healthy dinner

Need a quick and healthy meal to help you begin a few days of cleaner eating?

Tonight I fixed this simple vegetarian meal in about 15 minutes. I usually opt for fresh or frozen veggies, but I did grab a can of corn, and a can of organic fire-roasted tomatoes that were already in my pantry.  I made some couscous, adding a pinch of Parmesan cheese, corn and fire-roasted tomatoes.

While that was cooking, I lightly pan-fried (with a tablespoon of walnut oil) a kale veggie burger and served it over a bed of the couscous. I added some olive tapenade hummus stuffed celery and a few slices of fresh tomatoes, and had a beverage of iced water with lemon.

It was quite tasty and hit the spot! Below is the nutritional data from my food tracking data (I use “My Fitness Pal” app).
