Pasta with no gluten, no soy, no calories, no guilt? WHAT???
It’s true! I discovered a new product while watching a post by JJ Virgin recently. It’s called “Miracle Noodles“, a plant that has been used to create pasta-like noodles and rice. I got a sampler that included angel hair “pasta”, rice and fettuccini. My favorite was the fettuccini.
On Monday night, I took a package of the fettuccini noodles, along with some organic Kale and yellow onions from my favorite farm market (Cecil Creek Farms), chopped tomatoes, added a bit of garlic, salt, pepper and a few red pepper flakes, and within 15 minutes has this uber-delish meal that had barely any calories but a boatload of flavor! It was even better when I had it again for lunch the following day

MIRACLE MEAL
INGREDIENTS
1 package Miracle Noodles fettuccini
1 large bundling of fresh, organic kale
1 small organic yellow onion
3 medium organic tomatoes
1 clove chopped garlic
2 tablespoons extra virgin olive oil
Salt, pepper and pepper flakes to taste (optional)
DIRECTIONS
Prepare noodles per package instructions, put aside.
Chop all veggies.
Heat EVOO in large frying pan, add kale and other veggies.
Stir frequently, adding a bit of seasonings to taste.
it will be ready when kale becomes bright green and tender,
Add noodles (as is or chopped, as you prefer).
Mix together, then serve.
